Irresistible Spinach Artichoke Dip with crispy bacon - a surefire hit for any party or game night!
Ingredients:
  • 6 slices bacon (about 1/3 pound), chopped
  • 2 cloves garlic, minced
  • 1 14-ounce can artichoke hearts, drained and chopped
  • 1 10-ounce package frozen spinach, thawed, drained, and chopped, or 1 12-ounce bunch fresh spinach, finely chopped
  • 1/4 teaspoon crushed red pepper flakes
  • 1/2 teaspoon kosher salt (or slightly less table salt)
  • 1 8-ounce package cream cheese, at room temperature
  • 8 ounces shredded Italian cheese blend
  • 1/2 cup sour cream
  • Pita chips, tortilla chips, crackers, or celery sticks, for serving
Instructions:
  • Heat your oven to 400˚F.
  • Fry the chopped bacon in a skillet over medium heat until crispy, for about 7 to 10 minutes. Remove the bacon from the skillet and place it on a paper towel-lined plate to drain. Reserve some bacon for garnishing the dip.
  • Sauté the garlic in the pan until fragrant, around 30 seconds. Add artichoke hearts, spinach, red pepper flakes, and salt. Cook, stirring occasionally, until artichokes are heated through and spinach is wilted, approximately 5 minutes.
  • Mix together the cream cheese, Italian cheese blend, sour cream, reserved bacon, and spinach-artichoke mixture in a bowl until fully combined.
  • Bake and present: Place the mixture in a 1- to 2-quart baking dish and bake until edges bubble, approximately 20 minutes. Cool briefly, sprinkle with saved bacon, and enjoy with pita chips. This dip is most delicious when served warm. If it cools and thickens, reheat in the microwave for 1-2 minutes to melt the cheese.
