Summer arugula salad with prosciutto, blue cheese, and pear - bursting with flavor.
Ingredients:
  • 1 bunch fresh chives
  • 0.5 cup olive oil
  • 4 cups baby arugula
  • 4 slices prosciutto, chopped, or more to taste
  • 0.5 cup crumbled blue cheese (such as Point Reyes®)
  • 2 medium Bosc pears
  • 0.25 cup balsamic vinegar glaze (such as Trader Joe's®)
Instructions:
  • Roughly chop chives and place them in a food processor. Pour in olive oil and blend for 1 minute. Pour the mixture into a squeeze bottle dispenser and keep it on standby.
  • Divide arugula among 4 plates, then layer with prosciutto and blue cheese.
  • Peel and core the pears, then thinly slice each half and arrange in a fanned pattern on plates.
  • Drizzle chive olive oil over the salad, ensuring it cascades elegantly onto the plate edges. Repeat the process with the balsamic glaze for a delightful finishing touch.
