Indulge in flavorful Asian lettuce wraps featuring grilled beef, crunchy veggies, and aromatic herbs. A zesty marinade of sriracha, ginger, lime, and fish sauce also serves as a delicious dipping sauce.
Ingredients:
  • For the marinade/dipping sauce:
  • 1/2 cup low sodium soy sauce
  • 3 tablespoons lime juice
  • 2 teaspoons fish sauce
  • 2 teaspoons Sriracha or other hot sauce (or to taste)
  • 1 teaspoon sesame oil
  • 3 tablespoons dark brown sugar
  • 2 tablespoons finely chopped peeled ginger root
  • 1 teaspoon finely chopped garlic
  • 2 scallions, finely sliced
  • 1 1/2 pounds flank steak
  • For the wraps:
  • 6 ounces rice noodles (any kind)
  • Leaves from 1 head Boston or red leaf lettuce
  • 4 scallions, thinly sliced
  • 4 radishes, thinly sliced
  • 2 Persian cucumbers, thinly sliced
  • 1/2 cup roasted peanuts
  • Handful of fresh cilantro leaves
  • Handful of fresh mint leaves
Instructions:
  • Prepare the marinade/dipping sauce by mixing soy sauce, lime juice, fish sauce, sriracha, sesame oil, brown sugar, ginger, garlic, and scallions in a small bowl. Split the mixture for both marinating and dipping purposes.
  • To marinate the steak, place it in a shallow dish, pour 1/3 cup of the marinade over it, coat the steak in the marinade, and let it marinate for 30 minutes at room temperature. For longer marinating, refrigerate for up to 24 hours, ensuring the steak comes to room temperature before grilling. Set aside remaining marinade for dipping sauce later.
  • Prepare the rice noodles according to the package instructions. Drain and rinse under cold water in a colander, using your hands to separate the noodles and prevent clumping.
  • Cook the steak on a preheated grill over high heat (about 450oF) for 3 to 5 minutes per side until medium-rare (135oF). Use an instant-read thermometer to check for doneness: 125°F for rare, 135°F for medium-rare, and 145°F for medium. Timing may vary based on the grill's temperature and the steak's thickness.
  • Let the steak rest on a cutting board under foil for 10 minutes, then slice thinly across the grain.
  • Prepare a beautiful platter: Tear the lettuce leaves into large pieces, removing the stiff stem ends. Place the lettuce leaves, scallions, radish, cucumbers, peanuts, mint, and cilantro around the sliced steak, rice noodles, and dipping sauce on a large platter. Each person can customize their own wrap.
  • Assemble the wraps: Lay a vibrant lettuce leaf on a plate. Layer with delicate rice noodles and savory steak slices, then add a pop of flavor with scallions, cilantro, mint, radishes, cucumbers, and peanuts. Roll or fold gracefully and serve alongside a delectable dipping sauce.
