Spicy cucumber salad with Asian flair tossed in garlic, ginger, and sesame vinaigrette for a refreshing side.
Ingredients:
  • 2 cucumbers - halved lengthwise, seeded, and sliced
  • 2 teaspoons salt
  • 0.5 cup rice vinegar
  • 2 tablespoons sesame oil
  • 1 tablespoon minced garlic
  • 1 tablespoon minced fresh ginger root
  • 1 tablespoon sesame seeds
  • 4 fresh red chile peppers, sliced
Instructions:
  • Lay cucumber slices in a colander, generously sprinkle with salt, and leave to drain for 1 hour.
  • Combine vinegar and sugar in a bowl, whisking until sugar dissolves. Mix in sesame oil, garlic, ginger, and sesame seeds until well combined.
  • Rinse cucumber slices under cold water to remove salt; combine in a large bowl with sliced red chile peppers. Drizzle dressing over vegetables and toss to coat. Serve right away.
