Spiralized cucumber salad with sesame soy dressing - a refreshing Asian side dish made in minutes.
Ingredients:
  • 2 English cucumbers, peeled
  • 1 teaspoon salt, divided, or to taste
  • 2 tablespoons garlic-seasoned rice wine vinegar
  • 1 tablespoon toasted sesame oil
  • 1 tablespoon soy sauce
  • 1 teaspoon white sugar
  • 0.25 teaspoon toasted sesame seeds
Instructions:
  • Use a spiralizer set to the thinnest setting to create long, thin noodle shapes from the cucumbers.
  • Place cucumber noodles in a fine-mesh strainer over a bowl, sprinkle with 1/2 teaspoon salt, and toss to combine. Allow cucumber to sit for about 30 minutes until moisture is released.
  • Combine rice vinegar, sesame oil, soy sauce, and sugar in a bowl and whisk until sugar is fully dissolved. Toss in cucumber until coated, sprinkle with sesame seeds, and season with the remaining 1/2 teaspoon of salt.
