Asian Greens with Chicken

Sautéed chicken with couscous, greens, Greek cheese, and cherry tomatoes for a delicious and simple weeknight dinner.
Ingredients:
  • 2 teaspoons olive oil
  • 0.25 cup diced onion
  • 3 chicken tenders
  • 1 pinch garlic salt
  • cracked black pepper to taste
  • 0.75 cup bok choy, chopped
  • 1.3333333730698 cups water
  • 1 (5.6 ounce) box couscous, (such as Near East® Toasted Pine Nut)
  • 1 tablespoon olive oil
  • 12 cherry tomatoes, halved
  • 0.25 ounce grated Mizithra cheese
Instructions:
  • In a skillet over medium-high heat, heat 2 teaspoons of olive oil. Saute onions until slightly softened, for about 3 to 5 minutes. Add chicken to the skillet, season with garlic salt and black pepper, cover and cook until browned on one side, 3 to 5 minutes. Flip chicken, season the other side, and cook until done. Transfer chicken and onions to a cutting board, and chop the chicken.
  • Add bok choy to the skillet, lower the heat, cover with a lid, and cook until greens are slightly tender, about 1 1/2 minutes.
  • In a saucepan, bring water to a boil, then remove from heat. Stir in couscous spice packet and 1 tablespoon of olive oil. Add couscous, cover, and let stand until water is absorbed, approximately 10 minutes. Fluff couscous with a fork before serving.
  • Plate a delightful combination of fluffy couscous, crisp greens, savory onions, and tender chicken. Generously sprinkle vibrant tomatoes and flavorful Mizithra cheese over the top to enhance the experience.
