Chargrilled citrus chicken with sesame and asian greens

Asian-inspired tender chicken breasts.
Ingredients:
  • 1 lemon, juiced, zested
  • 1 orange, juiced, zested
  • 11.80 gm Dijon mustard
  • 2 tsp sesame oil
  • 6.00 gm sesame seeds
  • 12.20 gm fish sauce
  • 4 small (170g each) chicken breast fillets, each halved into two thin fillets
  • 1 bunch gai lan (Chinese broccoli), cut into 7cm lengths
  • 1 bunch baby bok choy, leaves separated
Instructions:
  • In a bowl, combine citrus rind, citrus juice, mustard, sesame oil, sesame seeds, and fish sauce. Pour half of the dressing over the chicken in a separate bowl and coat evenly. Heat a chargrill pan over high heat, grill the chicken for 1 minute each side until cooked through, discarding the marinade.
  • Transfer the cooked greens to a plate, cover to keep warm. Cook gai lan and bok choy in boiling salted water for 3 minutes until wilted and bright green. Drain. Toss the greens with half of the dressing. Divide among bowls and top with chicken and the rest of the dressing.
