Egg and kale Asian pasta with savory soy sauce.
Ingredients:
  • 1 (8 ounce) package spaghetti
  • 2 tablespoons vegetable oil
  • 1 clove garlic, minced
  • 1 (1 inch) piece fresh ginger root, minced
  • 4 cups torn kale leaves
  • 0.25 cup soy sauce
  • 1 cup water
  • 4 eggs, beaten
  • 1 teaspoon crushed red pepper
  • 1 teaspoon sesame oil
Instructions:
  • Bring a pot of salted water to a rapid boil. Cook the spaghetti until al dente, about 12 minutes. Drain and set aside.
  • Warm the vegetable oil in a spacious skillet on medium heat.
  • Sauté the garlic and ginger in the hot oil until fragrant, approximately 1 minute.
  • Add the kale to the fragrant garlic and ginger mix and sauté for an additional minute, ensuring to stir continuously.
  • Add the drained spaghetti to the kale mixture and quickly toss for 30 seconds before stirring in the soy sauce and water. Simmer the mixture for 2 minutes.
  • Create a crater in the center of the spaghetti blend. Add the eggs into the hollow, slowly incorporating them into the noodles while they cook until evenly dispersed and cooked, approximately 5 minutes.
  • Sprinkle with crushed red pepper flakes for a kick of heat. Finish by drizzling sesame oil over the noodles before serving.
