Bring the flavors of Asia home with this simple pork cutlets dish for your family.
Ingredients:
  • 16.00 gm brown sugar
  • 80ml (1/3 cup) tamari
  • 6 whole star anise
  • 20.00 ml finely grated fresh ginger
  • 20.00 ml rice vinegar
  • 1/2 tsp sesame oil
  • 8 (about 1.6kg) pork loin cutlets, excess fat trimmed
  • 60ml (1/4 cup) water
  • 1.50 gm sesame seeds
  • 1 bunch gai choy, ends trimmed
  • 1 bunch choy sum, ends trimmed
  • 1/2 small Chinese cabbage, coarsely chopped
  • 1 bunch green shallots, ends trimmed, thinly sliced diagonally
Instructions:
  • In a glass bowl, mix together sugar, 60ml (1/4 cup) tamari, star anise, ginger, vinegar, and oil. Add the pork, ensuring it is fully coated. Refrigerate covered for 3 hours to enhance the flavors.
  • Preheat your oven to a piping hot 220°C. Take the pork out of the marinade and place it in a roasting pan, keeping the marinade aside. Roast in the oven for about 20 minutes until the pork is beautifully browned and perfectly cooked. Then, move it to a plate, cover it with foil, and let it rest for 5 minutes before serving.
  • Combine the reserved marinade with water in the roasting pan and bring to a boil over high heat. Cook and stir for 5 minutes until the sauce thickens. Stir in the remaining tamari until well combined, then remove from heat.
  • 1. Heat a wok over medium heat. Add sesame seeds and cook, stirring consistently for 1 minute until toasted. Transfer to a plate. Next, add gai choy, choy sum, cabbage, and green shallot to the wok. Stir-fry for 2 minutes until just wilted.
  • Arrange the Asian greens on serving plates and generously sprinkle with sesame seeds. Place the pork on top of the greens and serve with a drizzle of the flavorful sauce.
