Asian-style beef kebabs with noodle salad

Asian-inspired beef kebabs with flavorful noodle salad - a crowd-pleaser perfect for sharing and leftovers!
Ingredients:
  • 1kg 3 Star Beef Mince
  • 80ml oyster sauce
  • 2 spring onions, thinly sliced
  • 62.50 ml coriander, chopped
  • 1 Free Range Egg, lightly whisked
  • 35g breadcrumbs
  • Canola oil spray
  • 400g pkt wholemeal hokkien noodles
  • 150g Australian Baby Leaf Blend
  • 80ml dressing
  • Thinly sliced spring onion, extra, to serve
  • Sesame seeds, to serve
  • Sambal oelek, to serve
  • Lime wedges, to serve
Instructions:
  • Mix together ground meat, oyster sauce, chopped spring onion, fresh coriander, egg, and breadcrumbs in a bowl. Add seasoning for flavor. Shape the mixture evenly around 18 metal or bamboo skewers, pressing firmly to hold together. Spray with oil before cooking.
  • Preheat a barbecue grill or chargrill to medium heat. Grill the kebabs in batches, turning occasionally, for approximately 7 minutes or until they are fully cooked.
  • Place the noodles in a heatproof bowl and cover them with boiling water. Let them stand for 1 minute, then separate the noodles with a fork. Rinse them under cold water, drain well, and transfer to a bowl with salad leaves and dressing. Toss everything together to combine.
  • Lay noodles elegantly on a platter. Place kebabs on top and generously scatter additional spring onion and sesame seeds. Serve with sambal oelek and wedges of lime.
