Whip up a quick and delicious marinated tofu and bean salad in just 15 minutes for a healthy and satisfying dinner option.
Ingredients:
  • 350g pkt Nature’s Kitchen Sweet Chilli Tofu Nuggets or 350g satay tofu pieces
  • 150g edamame beans
  • 350g pkt Kitchen Asian Style Salad Kit
  • 82.50 ml coriander leaves
  • Lime wedges, to serve
Instructions:
  • Prepare tofu according to package instructions.
  • Place the edamame or broad beans in a saucepan, cover with water, and boil over high heat for 2 minutes until heated through. Refresh under cold water and drain.
  • Combine salad kit ingredients with edamame or broad beans in a large bowl following packet directions, tossing to mix well.
  • Distribute the salad evenly into bowls. Layer with tofu and garnish with fresh coriander leaves. Serve with lime wedges.
