Delicious asparagus, ham, and rocket stuffed omelette - a perfect breakfast treat!
Ingredients:
  • 16 fresh asparagus spears, woody ends trimmed
  • 8 eggs, lightly beaten
  • 30g cheese
  • 80g pkt baby rocket
  • 100g sliced lite ham
Instructions:
  • Quickly blanch the asparagus in boiling water for 2 minutes, then drain.
  • In a heated 18cm non-stick frying pan, lightly spray with olive oil. Pour one-fourth of the beaten eggs into the pan, swirling to evenly coat the base. Cook for 2-3 minutes until the eggs are just set.
  • Transfer the omelette to a serving plate. Sprinkle half of it with a touch of cheese, rocket leaves, a few ham slices, and 4 asparagus spears. Add a little more cheese and season with pepper. Fold the omelette over to close it. Repeat the process with the remaining egg and filling ingredients to create 4 omelettes. Serve promptly.
