Upgrade classic green bean amandine by using fresh in-season asparagus.
Ingredients:
  • 2 tablespoons raw sliced almonds
  • 1 tablespoon unsalted butter
  • 1 tablespoon extra-virgin olive oil
  • 1 pound fresh asparagus, trimmed
  • 1 pinch salt and ground black pepper to taste
  • 2 tablespoons unseasoned bread crumbs, or more to taste
  • 1 tablespoon fresh lemon juice, or to taste
Instructions:
  • Heat a large nonstick skillet over medium-high heat. Add sliced almonds and toast gently, stirring and shaking the skillet occasionally, for 1 to 2 minutes until lightly browned. Be attentive to avoid burning. Remove almonds from skillet and set aside.
  • In a skillet, melt butter and olive oil together until combined, about 1 minute. Add asparagus spears and season with salt and pepper. Cook, stirring occasionally, until tender-crisp, for about 4 to 6 minutes. Transfer to a serving plate.
  • Combine the bread crumbs with the remaining butter and oil in the warm skillet. Stir until lightly golden, about 1 to 2 minutes.
  • Drizzle fresh lemon juice over the cooked asparagus, sprinkle with crispy browned breadcrumbs, and top with toasted almonds for a delightful finish.
