Asparagus sushi

Ingredients:
  • 200 g sushi rice
  • 3 tablespoons of sesame seeds
  • 100 g fine asparagus
  • 2 tablespoons sweet soy sauce
  • 2 tablespoons soy sauce
  • 1 large ripe avocado
  • 2 limes
  • 2 sushi nori strips
  • 1 tablespoons of wasabi
  • shiso cress
Instructions:
  • Cook the sushi rice following the package instructions and set aside. Toast sesame seeds in a dry pan until golden. Grill asparagus over high heat for 10 minutes until charred. Place soy sauce on one plate and sesame seeds on another. Roll asparagus in soy sauce, then sesame seeds. Peel, pit, and slice avocado into strips. Squeeze lime juice over avocado. Lay nori on a sushi rolling mat. Spread half the rice on top, leaving a gap on each end. Add a line of wasabi down the center. Top with avocado and asparagus, then tightly roll up the sushi. Slice each roll into about 12 pieces. Serve with sweet soy sauce, shiso cress, and lime wedges.
