Asparagus and prosciutto

Impress your guests with a fresh take on a classic party favorite.
Ingredients:
  • 6 prosciutto slices, cut lengthways into 2cm strips
  • 2 bunches asparagus, trimmed
  • 20.00 ml balsamic vinegar
  • 27.30 gm extra virgin olive oil
  • Shaved parmesan, to serve
Instructions:
  • Heat up the barbecue or char-grill on high. Wrap each asparagus spear with a strip of prosciutto along its length. Repeat this step for the remaining asparagus and prosciutto.
  • Grill the asparagus until bright green and tender crisp, about 2-3 minutes, turning occasionally. Transfer to a platter, drizzle with vinegar and oil, season with pepper, sprinkle with parmesan, and serve hot.
