Asparagus roll-ups filled with savory bacon and chive for extra flavor.
Ingredients:
  • 6 slices bacon
  • 24 spears fresh asparagus, trimmed
  • 1 (8 ounce) package cream cheese, softened
  • 2 tablespoons finely chopped chives
  • 12 slices white bread, crusts removed
  • 2 tablespoons butter, melted
  • 3 tablespoons grated Parmesan cheese, divided
Instructions:
  • Heat your oven to a toasty 400 degrees F (200 degrees C).
  • Prepare the baking sheet with a light coating of oil.
  • Cook the bacon in a large, deep skillet over medium-high heat, flipping occasionally, until perfectly browned, for approximately 10 minutes. Then, drain the bacon on a paper towel-lined plate.
  • Once the bacon has cooled down, crumble it and place it in a bowl.
  • In a large skillet, add asparagus spears and enough water to reach 1 inch in height. Cook covered over medium heat until asparagus turns bright green and slightly tender, approximately 5 minutes. Remove and set aside.
  • Mix the cream cheese and chives into the bowl with bacon until well combined.
  • Flatten each bread slice with a rolling pin on a work surface until thin.
  • Evenly layer each slice of bread with the luxurious cream cheese mixture.
  • Take 2 asparagus spears and place them in the middle of a bread slice, then roll the slice around the asparagus to create a neat cylinder. Put it seam side down on the baking sheet and continue with the rest of the ingredients in the same way.
  • Drizzle melted butter over each roll and generously sprinkle with 1 1/2 teaspoons of Parmesan cheese.
  • Bake in the oven until golden brown and piping hot, about 10-12 minutes.
