Asparagus with sesame seeds and fresh herb tahini

Sensational starter: Pan-seared asparagus with sesame seeds and herbed tahini.
Ingredients:
  • 12.00 gm sesame seeds
  • 9.20 gm olive oil
  • 9 bunches (about 1.5kg) asparagus, woody ends trimmed
  • 1 garlic clove, crushed
  • 1 tsp sesame oil
  • 42.00 gm fresh lemon juice
  • Salt & freshly ground black pepper
  • 125g (1/2 cup) Mayver's Health Time unhulled tahini
  • 130g (1/2 cup) low-fat natural yoghurt
  • 125.00 ml fresh continental parsley leaves
  • 125.00 ml fresh coriander leaves
  • 60ml (1/4 cup) hot water
  • 2 tsp white balsamic vinegar
Instructions:
  • For the fresh herb tahini, combine tahini, yogurt, parsley, coriander, water, lemon juice, and vinegar in a food processor. Blend until smooth. Season with salt and pepper to taste and transfer to a serving bowl.
  • Toast sesame seeds in a large non-stick pan over medium-high heat, tossing occasionally, until golden, about 1 minute. Transfer to a plate.
  • Place the pan back on medium-high heat and drizzle in 1 teaspoon of olive oil along with half of the asparagus. Stir fry for 3-4 minutes until the asparagus turns bright green and is tender-crisp. Transfer to a plate and repeat the process with the rest of the olive oil and asparagus, making sure to reheat the pan between batches.
  • Add the garlic and sesame oil to the pan with the asparagus. Cook while tossing constantly for 1 minute until heated through. Drizzle with lemon juice, season with salt and pepper, and arrange on a warm serving platter. Sprinkle with sesame seeds and serve with fresh herb tahini and lemon wedges.
