Enhance the rich flavors of roasted sesame by using a Japanese mortar and pestle. Easily swap spinach for asparagus in this versatile recipe.
Ingredients:
  • 2 tablespoons sesame oil
  • 1 tablespoon brown sugar
  • 10 cups fresh spinach leaves
  • 4 tablespoons black sesame seeds, toasted
Instructions:
  • In a large skillet over medium heat, warm the tantalizing sesame oil until hot. Add the spinach in batches of 3 to 4 cups, stirring until wilted before adding more.
  • Crush the sesame seeds into a fine powder with a mortar and pestle. Once the spinach is wilted, push it to the sides of the pan and sprinkle sugar in the center. As the sugar caramelizes, mix it with the spinach until coated.
  • Plate the spinach elegantly and generously sprinkle ground sesame seeds on top for a delightful finish.
