Cheesy, crispy potato gratin - the ultimate side dish!
Ingredients:
  • 2 tablespoons butter or margarine
  • 1 small onion, chopped (1/4 cup)
  • 1 tablespoon all-purpose flour
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper
  • 2 cups milk
  • 2 cups shredded sharp Cheddar cheese (8 oz)
  • 6 medium potatoes, peeled and thinly sliced (6 cups)
  • 1/4 cup dry bread crumbs
  • Paprika, if desired
Instructions:
  • Preheat your oven to 375°F and generously grease a 1 1/2-quart casserole dish with shortening or cooking spray.
  • In a 2-quart saucepan, melt butter over medium heat. Saute onion until tender, about 2 minutes, stirring occasionally. Add flour, salt, and pepper, cook until bubbly while stirring constantly, then remove from heat.
  • Add milk, heating until boiling and stirring constantly. Boil and stir for 1 minute, then take off heat. Stir in 1 1/2 cups of cheese until melted.
  • Arrange the potatoes in the casserole dish and generously coat them with the creamy cheese sauce. Bake in the oven without a cover for 1 hour until golden and bubbling.
  • Combine the remaining 1/2 cup cheese and bread crumbs in a small bowl. Sprinkle this mixture over the potatoes and then add a touch of paprika for color. Bake uncovered for 15 to 20 minutes until the top is golden brown, bubbly, and the potatoes are tender.
