Savory meat pie elevated with crispy bacon and fragrant thyme.
Ingredients:
  • 900g beef rump steak, trimmed, chopped
  • 1 medium brown onion, finely chopped
  • 2 rashers middle bacon, trimmed, chopped
  • 44.40 gm tomato paste
  • 40.00 ml plain flour
  • 510.00 gm beef stock
  • 20.00 ml fresh thyme leaves
  • 4 sheets frozen ready-rolled shortcrust pastry, partially thawed, halved diagonally
  • 2 sheets frozen ready-rolled puff pastry, partially thawed, quartered
  • Tomato sauce, to serve
Instructions:
  • Pulse steak in a food processor until minced. Heat oil in a large frying pan over medium-high heat. Add onion and bacon. Sauté for 3 minutes until golden. Add minced steak. Cook for 6 to 8 minutes, using a wooden spoon to break it up until browned.
  • Combine tomato paste and flour in the pot, stirring for 1 minute until fully incorporated. Pour in stock and add thyme, stirring well. Bring to a boil, then reduce heat to medium-low. Simmer for 30 minutes until the sauce thickens and the meat is tender. Season with pepper and remove from heat.
  • 1. Preheat the oven to 200°C/180°C fan-forced. 2. Line eight 7.5cm round pie moulds with shortcrust pastry, trimming any excess. 3. Fill the pastry cases with the steak mixture. 4. Cover each pie with puff pastry, trimming any excess, and seal the edges by pressing them together with a fork. 5. Use a small sharp knife to cut a small cross on the tops of each pie. 6. Brush the tops of the pies with egg wash. 7. Bake in the preheated oven for 25 to 30 minutes until golden brown. 8. Serve with your favorite sauce and enjoy!
