Make adorable animal toasts with avocados for a fun and creative snack activity with your kids.
Ingredients:
  • 3.00 English muffin, split, toasted
  • 40.00 gm spreadable cream cheese
  • 1 avocado, peeled, halved, stoned
  • 2.00 Lebanese cucumber
  • 8.00 currants
  • 1.50 gm sesame seeds, toasted
  • 1/2 avocado, peeled, stoned, mashed
  • 1 boiled Free Range Egg, thinly sliced
  • 1 pitted black olive, thinly sliced
  • 4 thin nori slices
  • 20.00 gm spreadable cream cheese
  • 1/2 avocado, peeled
  • 1 cherry tomato
Instructions:
  • Assemble the turtle: Start by placing the muffin, cut-sides up, on a clean work surface. Spread with cream cheese. Trim the pointy end off one half of the avocado and set aside. Place the remaining avocado on the work surface and dice into squares, then carefully assemble to form a round shape on the muffin. Cut a 2cm-long piece from one end of the cucumber, then halve it crossways and place on the muffin as the head. Cut eight cucumber wedges for fins and attach them to the muffin. Spread a small amount of cream cheese on currants and place them on the cucumber head for eyes. Finish by sprinkling sesame seeds on top.
  • Assemble the frog by laying the muffin halves, cut-side up, on a clean work surface. Spread avocado on each half. Add two egg slices on top of the avocado for eyes and top each egg with two olive slices for pupils. Place nori strips on the avocado to form a mouth.
  • For the lizard: Start by placing a muffin, cut-sides up, on a clean work surface. Spread a generous layer of cream cheese on the muffin. Cut an avocado in half lengthways, remove the stone, and thinly slice crossways. Gently arrange the avocado slices over the cream cheese to create the lizard's body. Secure currants onto one avocado slice for eyes. Cut two small fork shapes from the tomato and place them as the lizard's tongue. Lastly, cut cucumber legs and place them on the muffin to complete the lizard.
