Avocado Peanut Butter Brownies (Vegan)

Indulgent vegan chocolate brownies packed with a surprising creamy twist of peanut butter and avocado for a rich and decadent treat.
Ingredients:
  • 1 cup natural creamy peanut butter
  • 1 (12 ounce) bag chocolate chips
  • 1 avocado, peeled and pitted
  • 0.5 cup soy milk
  • 0.5 cup canola oil
  • 1 cup whole-wheat flour
Instructions:
  • Preheat your oven to a toasty 350 degrees F (175 degrees C) and generously grease a 9x13-inch baking pan.
  • In a saucepan over low heat, combine peanut butter, chocolate chips, and sugar. Stir constantly until chocolate is melted, about 5 minutes. Increase heat to medium and keep stirring until mixture starts to bubble, about 5 more minutes. Remove from heat.
  • Purée avocado, soy milk, and canola oil in a food processor until silky. Fold avocado blend into chocolate mix until fully incorporated.
  • In a large bowl, combine whisked flour, baking powder, and salt. Add avocado-chocolate mixture and stir until just combined. Pour batter into the prepared baking pan, spreading evenly.
  • Bake in the preheated oven for around 20 minutes until the edges start to crisp up. Allow the brownies to cool completely before slicing and serving.
