Elevate your avocado toast with crispy maple-glazed bacon for a flavor explosion!
Ingredients:
  • 54.00 gm maple syrup
  • 8.00 gm brown sugar
  • 8 middle bacon rashers
  • 8 thick slices sourdough bread
  • 2 ripe avocados, stoned, peeled
  • 50g soft marinated fetta
  • 1 spring onion, thinly sliced
  • 10.60 gm lemon juice
  • Baby rocket leaves, to serve
  • Coarsely chopped chives, to serve
Instructions:
  • Preheat your oven to 200C. Line a baking tray with parchment paper. Mix maple syrup and sugar together in a bowl. Arrange the bacon slices on the tray and generously brush them with the maple mixture. Bake for 15 minutes, turning the bacon occasionally, until it becomes caramelized.
  • Brush the bread with a hint of oil and preheat a blazing hot chargrill. Toast each side for about 1 minute until nicely charred.
  • Combine ripe avocado, crumbled feta cheese, chopped spring onion, and freshly squeezed lemon juice in a bowl. Gently mash the mixture using the back of a wooden spoon until coarsely mashed.
  • Spread the creamy avocado mixture over the toasted bread, then layer on the crispy bacon, peppery rocket, and fresh chives.
