Elevate avocado toast with olives, fried egg, and smoked paprika for a satiating breakfast upgrade.
Ingredients:
  • 4 slices hearty whole grain, artisan-style bread, or another bread of your choice
  • 2 ripe avocados, halved, pit removed, and sliced
  • 1/8 teaspoon salt
  • Fresh ground black pepper, to taste
  • 4 lemon wedges
  • 1/4 cup sliced California Green Ripe Olives
  • 1/4 cup sliced mild peppadew peppers (or substitute sliced roasted red peppers)
  • 1 tablespoon unsalted butter
  • 4 large eggs
  • Smoked paprika, for garnish
Instructions:
  • Toast the bread in a toaster until it reaches your desired level of golden brown perfection.
  • - Top each piece of toast with creamy avocado slices or mashed avocado. Season with a sprinkle of salt and pepper. Squeeze a fresh lemon wedge over each. Finish by artfully arranging sliced olives and peppadews on top.
  • Heat butter in a skillet over low heat until melted. Coat the pan with butter by swirling it. Crack eggs into the skillet, cover, and cook for 2 minutes until egg whites are mostly opaque. Remove from heat, keep covered for 30 seconds to finish cooking. Use a spatula to transfer eggs onto avocado toasts and sprinkle with smoked paprika.
  • Serve the toasts while they are hot and crispy for maximum enjoyment.
