Elevate your avocado toast with zesty olive relish, tomatoes, and a balsamic drizzle for a satisfying breakfast upgrade.
Ingredients:
  • 1 tablespoon chopped red onion
  • 2 tablespoons lemon juice (from 1 large lemon)
  • 1 tablespoon balsamic vinegar
  • 1 cup cherry tomatoes, halved or quartered
  • 1/4 cup sliced green olives
  • 1 tablespoon drained capers
  • 2 tablespoons chopped fresh parsley
  • 1/4 teaspoon salt
  • Freshly ground black pepper, to taste
  • 4 slices hearty whole grain, artisan-style bread, or another bread of your choice
  • 2 avocados, halved, pit removed, and sliced
  • 4 lemon wedges
  • 2 tablespoons toasted pine nuts
Instructions:
  • Prepare the relish by combining red onion, lemon juice, and vinegar in a bowl. Allow it to marinate for 5 minutes while you dice the tomatoes. Mix in the tomatoes, olives, capers, and parsley. Season with salt and pepper. For best results, refrigerate the relish until serving, adding tomatoes and parsley right before serving if making in advance.
  • Toast the bread in a toaster until golden brown or to your liking.
  • Top the toast with sliced or mashed avocado, season with salt and pepper, drizzle with lemon juice, and finish by adding olive relish and pine nuts.
