Fall's perfect dessert: award-winning apple pie with almond paste crust and creamy cream cheese filling.
Ingredients:
  • 1 (14.1 ounce) package refrigerated pie crusts, at room temperature
  • 1 (8 ounce) package cream cheese, softened
  • 0.33333334326744 cup white sugar
  • 1 large egg
  • 0.5 teaspoon grated lemon zest
  • 0.125 teaspoon salt
  • 4 large Granny Smith apples - peeled, cored, and thinly sliced
  • 0.5 cup packed brown sugar
  • 0.5 teaspoon ground cinnamon
  • 0.5 (7 ounce) package almond paste
  • 3 tablespoons apricot jam
Instructions:
  • Preheat your oven to 375°F (190°C).
  • Place the pie crust on a clean work surface. Use a cookie cutter to create 2- to 3-inch hearts (or any desired shape). Place the shapes on an ungreased cookie sheet.
  • Bake in the preheated oven until lightly golden, approximately 8 minutes, then allow it to cool.
  • Combine cream cheese, white sugar, egg, lemon zest, and salt in a medium bowl. Use an electric mixer on medium speed to blend until smooth.
  • Combine sliced apples, rich brown sugar, and warm cinnamon in a spacious bowl.
  • Place the second pie crust gently into a 9-inch glass pie plate without greasing the plate.
  • Flatten almond paste into a 7-inch circle between waxed paper. Peel off the top layer of paper, then place the almond paste circle into the pie plate. Press gently into the crust and discard the waxed paper. Spread cream cheese mix over almond paste and layer apples in a circular pattern on top.
  • Bake in the preheated oven for 40 to 45 minutes, or until the filling is set and slightly puffed.
  • Heat apricot jam in a microwave-safe bowl on medium power for 1 minute. Brush over apples and arrange heart cutouts on top. Allow to cool for about 1 hour until filling sets.
