Awesome Egg Rolls

Delicious shrimp-filled egg rolls with crispy golden-brown exterior.
Ingredients:
  • 1 tsp vegetable oil
  • 1 egg, beaten
  • 6 cups cabbage, shredded
  • 0.5 cup fresh bean sprouts
  • 1 carrot, shredded
  • 1 celery stalk, diced
  • 2 tablespoons chopped onion
  • 1 (4 ounce) can shrimp, drained
  • 2 tablespoons soy sauce
  • 0.125 teaspoon garlic powder
  • black pepper to taste
  • 1 T cornstarch
  • vegetable oil for frying
  • 2 T cold water
  • 20 egg roll wrappers
Instructions:
  • Warm 1 teaspoon of oil in a nonstick skillet over medium heat. Gently slide in the egg and let it cook undisturbed until the bottom is cooked. Flip and cook the other side until cooked through, which takes around 1 to 2 minutes. Move the cooked egg to a cutting board and chop finely.
  • Combine shredded cabbage, bean sprouts, grated carrot, sliced celery, and diced onion in a large bowl. Add shrimp, soy sauce, garlic powder, and pepper. Gently fold in chopped egg, then sprinkle 1 tablespoon of cornstarch over the mixture. Stir well to incorporate all ingredients and allow it to rest for 10 minutes before serving.
  • Preheat a deep fryer with 3 to 4 inches of vegetable oil to 350 degrees F (175 degrees C). Combine water and the remaining 1 tablespoon of cornstarch in a small bowl.
  • Lay an egg roll wrapper on a flat surface in a diamond shape. Add 2 to 3 tablespoons of shrimp mixture at the center. Dampen the top and side corners with the cornstarch mixture. Fold the bottom corner tightly over the filling. Fold in the side corners, pressing gently to seal, then roll towards the top corner. Repeat to create more egg rolls.
  • Fry egg rolls in batches until crisp and golden, about 2 to 4 minutes each. Drain on paper towels.
