Baby green vegetables with lemon pepper butter

Elevate your veggies with this colorful side dish.
Ingredients:
  • 300g baby green beans, trimmed
  • 300g sugar snap peas, trimmed
  • 300g baby frozen peas
  • 50g unsalted butter
  • 1 lemon, zested, juiced
Instructions:
  • Cook the vegetables briefly in boiling salted water, then drain and rinse under cold water. Melt butter in a saucepan over low heat and stir in lemon zest, half of the lemon juice, and 1/2 teaspoon of ground black pepper. Add the blanched vegetables and toss until warmed. Serve alongside the spatchcocks.
