Baby Rattle Pear Cupcakes

Pear-filled cupcakes made with white cake mix and topped with gumdrop lollipop stick handles for a playful touch.
Ingredients:
  • 1 box Betty Crocker™ Super Moist™ White Cake Mix
  • 1 can (15 oz) sliced pears in light syrup, drained, 1/3 cup syrup reserved
  • 1/3 cup vegetable oil
  • 3 egg whites
  • 1/2 cup butter or margarine, softened
  • 3 tablespoons shortening
  • 1 teaspoon vanilla
  • 4 cups powdered sugar
  • 3 to 4 tablespoons milk
  • 1 drop each of yellow and green food colors
  • Betty Crocker™ candy sprinkles and decors, if desired
  • 8 yards pastel satin or curling ribbon (1/4 inch), if desired
  • 20 paper lollipop sticks (4 1/2 inch)
  • 20 small gumdrops
Instructions:
  • Preheat oven to 350°F (325°F for dark or nonstick pans) and line 20 regular-size muffin cups with paper baking cups.
  • In a large bowl, use an electric mixer on low speed to mix together the cake mix, pears, 1/3 cup of reserved pear syrup, oil, and egg whites for 30 seconds. Increase to medium speed and beat for 2 minutes, scraping the bowl occasionally. Evenly distribute the batter among the muffin cups.
  • Bake for 22 to 27 minutes until a toothpick inserted in the center comes out clean. Let it cool for 10 minutes, then remove from the pan onto a cooling rack. Cool completely for about 30 minutes.
  • In a medium bowl, mix butter, shortening, vanilla, powdered sugar, and 3 tablespoons milk on low speed until well combined. Increase speed to medium, adding more milk if needed, until frosting is light and easy to spread. Divide frosting evenly into 2 small bowls. Mix yellow food coloring into one bowl and green food coloring into the other bowl until well blended.
  • - Spread the remaining white frosting on the cupcakes. - Use yellow and green frostings to pipe designs on the cupcakes. - Decorate with candy sprinkles as desired. - Use a bamboo skewer to poke a hole in the side of each cupcake. - Tie a ribbon bow in the center of each lollipop stick. - Place a gumdrop on one end of each stick. - Insert the other ends of the sticks into the sides of the cupcakes just below the frosting to create rattles. - Store the cupcakes loosely covered.
