Ingredients:
  • 1 pinch freshly grated nutmeg
  • 1 tablespoon bacon grease
  • 1 (1 pound) loaf day-old bread, cubed
  • 12 large eggs
  • 2 teaspoons kosher salt
  • 0.5 teaspoon freshly ground black pepper
  • 1 pinch cayenne pepper
  • 2.5 cups heavy cream
  • 1 pound sliced bacon, cut crosswise into 1/2-inch strips
  • 1 pound fresh spinach, wilted, squeezed dry
  • 12 ounces shredded extra-sharp Cheddar cheese, divided
Instructions:
  • Grease a 9x13-inch baking dish generously with savory bacon fat for added flavor.
  • In a spacious mixing bowl, add the bread cubes.
  • Begin by gently cracking the eggs into a separate mixing bowl, then generously season them with salt, pepper, cayenne, and nutmeg. Pour in the cream and whisk everything together until perfectly combined.
  • Drizzle the creamy egg mixture over the bread cubes, ensuring all ingredients are well combined. Let the bread mixture rest for 15 minutes to soak up the delicious liquid.
  • Spread half of the bread mixture evenly in the baking pan; gently press it down. Sprinkle half of the grated Cheddar cheese on top. Layer the cooked bacon evenly over the cheese, followed by the cooked spinach. Sprinkle half of the remaining cheese over the spinach. Evenly spread and gently press down the rest of the soaked bread cubes. Top with the remaining grated cheese. Cover and allow the strata to sit at room temperature for 1 hour before baking.
  • Preheat your oven to 350°F (175°C) for the perfect baking temperature.
  • Bake the strata in a preheated oven for about 45 minutes until set. For a golden brown finish, broil for a minute or two as desired.
