Bacon, cheese and olive focaccia

Broil focaccia for melty, golden cheese topping.
Ingredients:
  • 4 rashers thin bacon, rind removed, halved crossways
  • 82.50 gm tomato chutney or relish
  • 100g mozzarella cheese, thinly sliced
  • 2 pieces round focaccia bread
  • 40.00 ml pitted kalamata olives, sliced
  • small basil leaves, to serve
  • french fries or potato straws, to serve
Instructions:
  • Preheat the grill to medium heat. Skewer the bacon in a zigzag pattern. Place the skewers on the grill tray and grill for 3 minutes on each side until golden. Let it cool a bit, then slide the bacon off the skewers.
  • Evenly spread chutney and half of the cheese on the focaccia. Then, layer on the bacon, olives, and the rest of the cheese.
  • Preheat the baking tray under the grill. Place the focaccia on the hot tray and grill for 4 minutes or until the cheese has melted. Sprinkle with fresh basil, season to taste, and serve with fries. Enjoy!
