Master the omelet, then easily whip up this delicious bacon, egg, and cheese breakfast sandwich in no time.
Ingredients:
  • 2 slices bacon
  • 4 tsp butter, divided
  • Pinch black pepper
  • Pinch salt
  • 1/4 cup shredded Cheddar cheese
  • 4 slices of bread
Instructions:
  • In a nonstick skillet over medium-high heat, cook the bacon until evenly browned, about 7 minutes, turning occasionally. Place the cooked bacon on paper towels to drain. Save the bacon grease for another recipe.
  • Froth eggs with a touch of salt and pepper in a small bowl.
  • In a nonstick skillet over medium heat, melt 2 teaspoons of butter. Add beaten eggs and cook for 30 seconds. Gently lift and tilt the skillet to allow the uncooked egg to run underneath the cooked edges. Continue this process until the top is set, about 3 minutes. Then, reduce heat to low.
  • While you wait, roughly chop the bacon and scatter it over the omelet. Sprinkle with cheese and let it melt for 1 to 2 minutes.
  • Spread a generous amount of butter on 2 slices of bread, using 1/2 teaspoon of butter for each slice. Place the buttered sides of the bread over the omelet, leaving a small gap between them. The cheese will melt and hold the bread in place.
  • Gently slide a spatula around the edges of the omelet to release it from the skillet. Flip the omelet so the buttered side of the bread touches the pan. Cook until the bread is golden and toasted, around 2 minutes.
  • Gently use the spatula to fold the omelet edges to match the sides of the bread. Cut the omelet down the middle to create 2 sandwiches. Butter the 2 remaining bread slices with the remaining butter, placing them butter side up on each sandwich. Flip the sandwiches and cook until golden, around 2 minutes. Serve and enjoy right away!
