Savory Brussels sprouts with bacon and Gorgonzola - a delicious side dish you won't forget!
Ingredients:
  • 4 slices bacon
  • 1 small red onion, thinly sliced
  • 0.25 teaspoon salt
  • 0.75 cup water
  • 1 teaspoon Dijon mustard
  • 1 pound Brussels sprouts, trimmed, halved lengthwise, and thinly sliced
  • 1 tablespoon cider vinegar
  • 0.5 cup crumbled Gorgonzola cheese, or to taste
Instructions:
  • Cook the bacon in a large, deep skillet over medium-high heat, turning occasionally, until evenly browned, about 10 minutes. Remove the bacon, but keep the drippings; place the bacon slices on a paper towel-lined plate to blot. Crumble once cool.
  • Saute onion and salt in hot fat over medium heat until tender, for about 5 minutes. Add water and Dijon mustard, stirring continuously until it comes to a boil. Deglaze the pan by scraping off the brown bits. Mix in Brussels sprouts and vinegar, cooking until tender, about 4 to 6 minutes. Finish by tossing with bacon and Gorgonzola cheese crumbles before serving.
