Delicious Brussels sprouts salad with blue cheese, bacon, and homemade croutons - a mouthwatering addition to any meal!
Ingredients:
  • 2 cups bread cubes
  • 3 tablespoons extra-virgin olive oil
  • 0.25 teaspoon garlic powder, or to taste
  • 1 pound Brussels sprouts
  • 1 tablespoon extra-virgin olive oil, or to taste
  • 4 slices bacon
  • 4 tablespoons crumbled blue cheese
  • 2 tablespoons red wine vinegar
Instructions:
  • Preheat your oven to 350 degrees F (175 degrees C) and prepare 2 baking sheets with parchment paper.
  • Coat bread cubes in a fragrant mixture of olive oil, garlic powder, salt, and pepper, then arrange them evenly on a baking sheet.
  • Bake in the preheated oven until golden and crunchy, about 15-20 minutes.
  • As the croutons bake, trim and discard the bottoms of the Brussels sprouts. Halve and shred the Brussels sprouts. Coat them in olive oil and season with salt and pepper before transferring to the second baking sheet.
  • Take out the croutons from the oven and replace them with Brussels sprouts. Roast until wilted, for 10 to 15 minutes.
  • As the Brussels sprouts roast, cook bacon in a large skillet over medium-high heat until crispy, about 10 minutes. Transfer the bacon to a paper towel-lined plate, reserving 1 tablespoon of bacon grease in the skillet. Crumble the bacon when it cools down.
  • Take the Brussels sprouts out of the oven and quickly transfer them to the skillet with the delicious bacon grease. Mix in the croutons, blue cheese, and red wine vinegar, and toss everything together until well coated.
  • Divide the salad among 4 bowls and sprinkle with crispy bacon on top.
