Bacon and chorizo French toast casserole

Elevate French toast with crispy bacon, smoky chorizo, cheese, spring onion, and mustard.
Ingredients:
  • 400g seeded sourdough bread
  • 60g butter, softened
  • 23.40 gm Dijon mustard
  • 6 eggs
  • 310ml (1 1/4 cups) milk
  • 2 spring onions, chopped
  • 150g Real Diced Bacon Pieces
  • 1 x 125g Classic Chorizo, chopped
  • 70g tasty cheese, grated
  • Chives, chopped, to serve
Instructions:
  • Preheat the oven to 180C/160C fan-forced and lightly grease a pie dish. Cut the sourdough into thin slices, mix butter and Dijon mustard in a bowl, then spread the butter mixture on each side of the bread slices. Finally, cut the bread slices in half diagonally.
  • In a large jug or bowl, vigorously whisk together eggs and milk, then season with salt and pepper. In another bowl, combine spring onions, bacon, and chorizo, mixing well. Spread half of the bacon mixture over the bottom of the pie dish. Arrange bread slices, crusts facing up, in a slightly overlapping pattern in the dish.
  • Sprinkle the leftover bacon mixture, followed by pouring the egg mix. Let it rest for 10 minutes to absorb the flavors. Top with cheese, bake uncovered for 50 minutes, then cover with foil to bake for an additional 10-15 minutes until the center is just set. Finish by garnishing with chives.
