Bacon and mushroom mini quiches

Filo pastry adds crunch to bacon and mushroom quiches.
Ingredients:
  • Olive oil spray
  • 250g Real Diced Bacon Pieces
  • 1 small onion, finely chopped
  • 200g button mushrooms, finely chopped
  • 12 sheets filo pastry
  • 120g grated Tasty Cheese Block (500g)
  • 40.00 ml chopped chives
  • 4 eggs
  • 185ml (3/4 cup) pouring cream
Instructions:
  • 1. Preheat your oven to 180C/160C fan-forced. Grease patty tins with non-stick cooking spray. Then, in a large non-stick frying pan over medium heat, spray oil and cook bacon and onion until golden, about 3-4 minutes. Add mushrooms and cook until soft and golden, about 4-5 minutes. Remove from heat and allow to cool.
  • Place a sheet of filo on a clean surface. Lightly spray with oil. Layer another sheet on top. Repeat this process for six layers. Do the same to form a second stack with the remaining filo sheets. Cut each stack into 12 pieces. Line the patty tins with the filo squares, scrunching them to create small cases.
  • Sprinkle half of the cheese into each pastry case. Mix chives into the bacon mixture. Divide bacon mixture evenly between the pastry cases. In a large jug, whisk together eggs, cream, salt, and pepper. Pour egg mixture evenly into pastry cases. Sprinkle remaining cheese on top. Bake for 30-35 minutes until golden and crisp. Serve.
