Delicious bacon and mushroom mini pies - a breakfast crowd-pleaser!
Ingredients:
  • 18.20 gm olive oil
  • 1 onion, finely chopped
  • 3 rashers bacon, rind removed, chopped
  • 200g mushrooms, sliced
  • 2 tsp fresh thyme leaves
  • 3 sheets ready-rolled butter puff pastry
  • 252.50 gm cream
  • baby spinach leaves, to serve
Instructions:
  • Preheat your oven to 220°C and place a baking tray inside to heat up.
  • In a frying pan over medium-high heat, heat oil. Add onion and bacon; cook for 4 minutes. Add mushrooms and thyme; cook for 3 minutes. Season to taste. Let cool.
  • Cut out 2 circles (14cm each) from each pastry sheet. Place the circles into 6 loose-base tart pans (12cm base). Fill with the bacon mixture and place the pans on a hot tray.
  • Combine eggs, cream, salt, and pepper in a bowl and pour over bacon mixture.
  • Bake for 30 minutes or until beautifully puffed and golden. Serve alongside baby spinach leaves.
