Create Bisquick® pancakes, layer with maple cream for a tasty breakfast whoopie pie.
Ingredients:
  • 2 cups Original Bisquick™ mix
  • 2 tablespoons granulated sugar
  • 2 teaspoons baking powder
  • 1 teaspoon vanilla
  • 1 1/2 cups buttermilk
  • 1 egg
  • 4 oz (half of 8-oz package) cream cheese, softened
  • 1/3 cup granulated sugar
  • 1/2 teaspoon maple flavor
  • 1 cup whipping cream
Instructions:
  • - In a medium bowl, combine baking mix, 2 tablespoons of sugar, baking powder, and vanilla, mixing until well blended. Add buttermilk and egg, stir with a fork or whisk until fully combined. - In another medium bowl, using an electric mixer on medium speed, beat cream cheese, 1/3 cup sugar, and maple flavor for about 1 minute until smooth, occasionally scraping the bowl. Gradually add whipping cream and beat on high speed for 2 minutes until stiff peaks form.
  • Preheat griddle over medium-high heat until it reaches 375°F. Grease with vegetable oil (or cooking spray if preferred). Pour 2 tablespoons of batter for each pancake onto the griddle. Cook until bubbles form on top and edges are dry, then flip and cook until golden brown. Allow pancakes to cool completely before serving.
  • Spread a generous amount of maple cream on one pancake, then sandwich it with another pancake. Refrigerate the whoopie pies once they're covered.
