Savory breakfast pies with flaky biscuit crust, filled with sausage, eggs, and gooey cheese. Perfect for meal prep and quick microwave breakfasts.
Ingredients:
  • 0.75 pound breakfast sausage
  • 0.125 cup minced onion
  • 0.125 cup minced green bell pepper
  • 1 (12 ounce) can refrigerated biscuit dough
  • 3 eggs, beaten
  • 3 tablespoons milk
  • 0.5 cup shredded Colby-Monterey Jack cheese
Instructions:
  • Preheat your oven to 400°F (200°C) for a perfect cooking environment.
  • In a large, deep skillet over medium-high heat, cook the sausage, onion, and green pepper until the sausage is evenly browned. Drain, crumble, and set aside.
  • 1. Divide the dough into 10 portions and shape each into a biscuit. Flatten them out and use them to line the bottom and sides of 10 muffin cups. 2. Evenly distribute the sausage mixture among the cups. 3. Combine the eggs and milk, then pour the mixture into the cups. 4. Top each cup with shredded cheese.
  • Bake in a warm oven for 18 to 20 minutes, or until the filling is firm.
