Indulge in a winning combo of creamy homemade mayo with savory bacon and crispy pine nuts.
Ingredients:
  • 500g packet dried farfalle pasta (bow-shaped pasta)
  • 250g bacon, rind removed, chopped
  • 125.00 ml pine nuts
  • 2.00 garlic clove, crushed
  • 250g cherry tomatoes, halved
  • 125.00 ml grated parmesan cheese
  • 5 green onions, thinly sliced
  • 2 egg yolks
  • 113.75 gm extra virgin olive oil
  • 113.75 gm extra light olive oil
  • 62.50 ml chopped basil
  • 20.00 ml white vinegar
  • 5.90 gm Dijon mustard
Instructions:
  • Boil pasta in generously salted water until tender, then drain and transfer to a large bowl.
  • 1. Preheat a medium non-stick frying pan over medium heat, then add bacon, pine nuts, and garlic. Cook, stirring frequently, for about 5 minutes until they turn golden brown.
  • Break up egg yolks in a food processor. While running, slowly add oils until thick and creamy. Transfer to a bowl, then mix in garlic, basil, vinegar, and mustard. Season with salt and pepper.
  • Combine the warm pasta with the bacon mixture, cherry tomatoes, parmesan, green onions, and mayonnaise. Season generously with salt and pepper before serving.
