Whip up a quick and delicious pesto bacon gnocchi for two in just 20 minutes!
Ingredients:
  • 3 rashers rindless bacon
  • 40.00 ml pine nuts
  • 500g gnocchi
  • 75.00 gm basil pesto
  • 100ml cream fraiche
Instructions:
  • Preheat a non-stick frypan until it's sizzling.
  • Cook the bacon over medium-high heat for 5 minutes until golden and crisp. Remove from the pan and break into pieces once cooled.
  • Toast the pine nuts in the same pan over medium-high heat, stirring constantly for about 1 minute until they turn golden, then remove from the pan.
  • While the gnocchi is cooking in a large pot of boiling water following the package directions, drain it. Put it back in the pot and mix in the pesto, creme fraiche, half of the bacon, and half of the pine nuts. Season to taste and gently stir to combine.
  • Distribute the gnocchi evenly into the serving bowls, and sprinkle the remaining bacon and pine nuts on top.
