Indulge in decadent bacon, bourbon, and apple pancakes for a cozy weekend breakfast treat.
Ingredients:
  • 2 teaspoons canola oil, divided
  • 2 cups diced apples
  • 2 tablespoons white sugar, divided
  • 2 teaspoons ground cinnamon
  • 0.75 cup milk
  • 2 tablespoons melted butter
  • 1 egg
  • 1.5 teaspoons bourbon whiskey
  • 0.5 teaspoon vanilla extract
  • 0.5 cup all-purpose flour
  • 0.5 cup oat flour
  • 1 tablespoon baking powder
  • 2 tablespoons chopped cooked bacon
Instructions:
  • In a skillet over medium heat, sauté apples, sugar, and cinnamon in 1 teaspoon of canola oil until apples are slightly softened, about 5 to 10 minutes. Remove from heat.
  • In a bowl, combine milk, butter, egg, bourbon, and vanilla extract, whisk until smooth. In a separate bowl, sift together all-purpose flour, oat flour, 1 tablespoon sugar, baking powder, and salt. Stir the flour mixture into the milk mixture until well combined, then gently fold in apples and bacon.
  • In a skillet over medium heat, warm 1 teaspoon of canola oil. Pour 1/2 cup of batter per pancake onto the griddle. Cook until bubbles form and edges are dry, about 3 to 5 minutes. Flip and cook until browned, another 3 to 5 minutes. Repeat with the remaining batter.
