Bacon Chicken and Dumplings

Creamy bacon-infused chicken and potato stew with savory dumplings.
Ingredients:
  • 1 onion, diced
  • 3 slices bacon
  • 3 large potatoes, peeled and diced
  • 4 skinless, boneless chicken breast halves - diced
  • 3 cups chicken broth
  • 1 teaspoon poultry seasoning
  • salt and pepper to taste
  • 1 (15.25 ounce) can whole kernel corn, drained and rinsed
  • 3 cups half-and-half
  • 1.5 cups biscuit mix
  • 1 cup milk
Instructions:
  • In a large, deep skillet, fry the bacon over medium-high heat until crispy and brown. Remove the bacon, crumble it, and set aside. Keep the flavorful bacon drippings in the skillet.
  • Combine the potatoes, onion, and chicken with the bacon drippings, cooking for 15 minutes, stirring occasionally. Pour in the chicken broth, then season with poultry seasoning, salt, and pepper. Add the corn and simmer everything together for another 15 minutes.
  • Bring the half-and-half to a boil and add crumbled bacon. In a medium bowl, mix biscuit mix with milk until a thick dough forms. Drop tablespoon-sized portions of dough into the boiling mixture. Simmer uncovered for 10 minutes, then cover and simmer for another 10 minutes without stirring. Serve hot.
