Delicious chicken and veggie foil packet meal, perfect for grilling, campfire, or oven.
Ingredients:
  • 1 pound peppered bacon
  • 3 medium potatoes, chopped
  • 3 medium carrots, peeled and chopped
  • 1 medium onion, chopped
  • 4 skinless, boneless chicken breast halves
  • 0.5 cup butter
  • garlic salt to taste
Instructions:
  • Cook the bacon in a skillet over medium-high heat until evenly browned. Remove, chop coarsely, and set aside.
  • Lay out 4 large squares of heavy duty aluminum foil. Spread out the potatoes, carrots, and onion evenly. Place the chicken breasts on top of the vegetables, then sprinkle them with chopped bacon. Add 2 tablespoons of butter on each packet and season with garlic salt. Fold the foil tightly over the ingredients to seal them in.
  • Fire up the grill to a sizzling medium-high heat.
  • Grill the foil packets for 20 minutes, or until the chicken is cooked through and the juices run clear.
