Creamy bacon and chicken pasta bake - easy, customizable weeknight dinner.
Ingredients:
  • 8 ounces penne pasta
  • 3 ounces pork shoulder bacon, cut into strips
  • 12 ounces cubed chicken breasts
  • 1/4 teaspoon black pepper
  • 1 teaspoon Italian seasoning
  • 3 tablespoons butter
  • 1/4 cup all-purpose flour
  • 2 cups 2% milk
  • 2 ounces shredded Gruyere cheese
  • 4 ounces shredded mozzarella cheese
Instructions:
  • Bring a large pot of lightly salted water to a rolling boil. Add penne and cook uncovered until al dente, about 10 minutes, stirring occasionally.
  • In a large skillet over medium-high heat, crisp up bacon, turning occasionally, for 4 to 5 minutes until fat is rendered. Transfer bacon to a plate to cool.
  • Preheat your oven to 350°F (175°C) for the perfect baking temperature.
  • In the same skillet, add the chicken and sprinkle with Italian seasoning and black pepper. Cook until golden, about 5 minutes, then remove from heat. Chop the bacon and add it to the skillet.
  • In a large saucepan over medium heat, melt butter until bubbly. Whisk in flour until it becomes a smooth golden mixture. Gradually pour in milk while whisking constantly. Add mozzarella and Gruyere cheeses, stirring until they are fully melted and the sauce is creamy.
  • Drain the pasta and toss it with the creamy cheese sauce, chicken, and crispy bacon. Transfer the delicious mixture to a casserole dish.
  • Simply bake in a hot oven, without covering, until bubbly, approximately 30 minutes.
