Try our easy and delicious bacon and jalapeño puff pastry bites for a quick and tasty twist on a classic favorite.
Ingredients:
  • 0.5 cup cream cheese, softened
  • 0.25 cup crème fraîche
  • 2 tablespoons minced green onions, plus some for garnish
  • 1 teaspoon fresh lime juice
  • 4 strips bacon
  • 0.66666668653488 cup water
  • 3 tablespoons butter
  • 1 tablespoon bacon fat
  • 0.66666668653488 cup all-purpose flour
  • 2 large eggs
  • 0.5 cup finely diced jalapeno peppers
  • 2 ounces shredded extra-sharp white Cheddar cheese
  • 1 pinch cayenne pepper
  • 1 pinch freshly ground black pepper
  • 2 cups vegetable oil for deep frying, or as needed
Instructions:
  • Prepare the tangy dipping sauce by combining cream cheese, crème fraîche, chopped green onions, and a splash of fresh lime juice in a bowl. Adjust the thickness by adding water until it reaches your desired texture.
  • Prepare the bacon: Cook the bacon in a large skillet over medium-high heat until it is crispy and evenly browned, about 10 minutes. Transfer the bacon to paper towels to drain, then crumble or finely chop it. Reserve 1 tablespoon of the bacon fat in the skillet and discard the rest.
  • Heat a skillet over medium-high heat. Add cold water, butter, reserved bacon fat, and salt. Bring to a simmer, then reduce heat to medium. Add flour all at once. Stir and mash with a wooden spoon until dough starts to come together, about 2 to 3 minutes. Remove from heat, transfer dough to a mixing bowl, and let cool for about 5 minutes.
  • Once the dough has cooled, whisk in 1 egg until mixture slightly separates, then whisk until it comes back together. Repeat with the second egg. Scrape the sides of the bowl and add diced jalapeño, bacon, shredded cheese, cayenne pepper, and black pepper. Mix well using a spatula. Wrap the dough in plastic wrap and refrigerate for 30 minutes to 1 hour.
  • Preheat the oil in a deep fryer to 375°F (190°C).
  • Scoop dough into hot oil and fry until golden and cooked through, about 3 to 4 minutes. Fry in batches if needed, then transfer to a cooling rack.
  • Present with a side of dipping sauce and adorned with a sprinkle of green onion slices.
