Deliciously tender bacon-basted Sunday chicken, easily customizable for any size bird.
Ingredients:
  • 2 tablespoons butter
  • 1 (4 pound) whole chicken
  • salt and pepper to taste
  • 1 teaspoon dried thyme
  • 2 carrots, cut in chunks
  • paprika to taste
  • 8 slices bacon
  • 2 cups beef broth
Instructions:
  • Preheat the oven to a scorching 450 degrees F (220 degrees C).
  • Massage the chicken with butter and generously season with salt, pepper, and thyme. Stuff the cavity with carrots, then tie the legs. Arrange the chicken breast side up in a roasting pan. Layer bacon on top of the chicken and secure with toothpicks. Dust with paprika. Carefully pour beef broth into the pan without touching the bacon.
  • Roast in a preheated oven for 15 minutes. Then, reduce the heat to 350 degrees F (175 degrees C) and baste with broth. Roast for an additional 1 hour and 15 minutes, or until the internal temperature in the thickest part of the thigh reaches 180 degrees F (82 degrees C). Remember to baste the turkey every 15 minutes with the broth.
  • Remove the bacon, discard toothpicks, and roast the chicken for 15 more minutes to achieve golden brown skin. Place on a serving platter, untie, and enjoy the bacon while opting to omit the carrots.
