Indulge in this irresistible sweet and savory bacon appetizer by Russ Crandall.
Ingredients:
  • 12 ounces bacon strips, cut into thirds crosswise
  • 1.5 pounds sweet potatoes, peeled and cut in 1/2-inch cubes
  • 1 tablespoon olive oil
  • 1 tablespoon melted butter
  • 0.25 teaspoon ground cinnamon
  • 1 pinch black pepper
  • 1 pinch Sea salt to taste
  • 1 sheet Reynolds Wrap® Aluminum Foil
Instructions:
  • Preheat the oven to 400°F and line a rimmed baking sheet with Reynolds Wrap® Aluminum Foil, then set it aside.
  • Wrap each sweet potato cube in a luscious strip of bacon, securing it with a toothpick, and arrange on the baking sheet with the toothpicks facing upwards.
  • Mix together the olive oil, melted butter, cinnamon, and pepper until well combined. Pour the mixture over the sweet potato bites and season with sea salt. Cover loosely with damp paper towels and aluminum foil. Bake until potatoes are tender, approximately 20 minutes.
  • Uncover and put back in the oven. Bake until the bacon is crispy and the fat begins to render, approximately 15-20 minutes more. Dab off any extra fat with paper towels before serving.
