Sweet cranberries enhance savory cornbread and bacon stuffing.
Ingredients:
  • 4 slices bacon, cut into 1/2-inch pieces
  • 1/2 cup chopped green bell pepper
  • 1/2 cup chopped onion
  • 1/2 cup sweetened dried cranberries
  • 2 1/4 cups water
  • 4 cups seasoned cornbread stuffing crumbs (from 16-oz bag)
  • 1/2 teaspoon seasoned salt
  • 1/4 teaspoon dried marjoram leaves
Instructions:
  • Preheat oven to 350°F and grease an 8-inch square (2-quart) glass baking dish. In a large nonstick skillet, cook bacon over medium heat for about 6 minutes until browned but not crisp. Add bell pepper and onion, cook for 3 to 4 minutes until tender. Stir in cranberries, then add water and bring to a boil. Remove skillet from heat.
  • Combine stuffing mix, seasoned salt, and marjoram until fully incorporated. Transfer the mixture into a baking dish.
  • Cover with foil and bake for about 30 minutes until piping hot.
