Elevate your holiday meal with a visually stunning cornbread stuffing featuring poppy seeds, bell peppers, and bacon. Enhance with toasted pecans, sweet cranberries, or golden raisins for a flavorful twist!
Ingredients:
  • 2 (8.5 ounce) packages corn muffin mix
  • 0.66666668653488 cup heavy cream
  • 2 tablespoons white sugar
  • 2 tablespoons olive oil
  • 1 tablespoon poppy seeds
  • 4 strips bacon, chopped
  • 1 green bell pepper, chopped
  • 1 red onion, chopped
  • 0.25 teaspoon dried marjoram
  • 1.5 cups chicken broth
Instructions:
  • Preheat the oven to 400 degrees F (200 degrees C) and grease a small square baking dish or spray it with cooking spray.
  • Combine the muffin mix, cream, eggs, sugar, oil, vanilla, and poppy seeds until a smooth batter forms.
  • Bake until beautifully golden and top springs back when gently pressed, 15 to 20 minutes. Let cool fully, then cut into bite-sized squares and place in a bowl.
  • Lower the oven temperature to 350 degrees F (175 degrees C).
  • In a large skillet over medium-high heat, brown the bacon. Add peppers and onions; sauté until tender. Take off the heat and combine with cornbread squares in a bowl. Season with marjoram, pour in chicken broth, and mix well. Transfer mixture to a baking dish, cover with foil.
  • Bake in a hot oven until warmed, approximately 30 minutes.
